Variation: replace the zest of the ½ orange with the zest of 1 untreated (organic) lemon.
Tip: this dish is also very good for Non-Fast Days. Add some roasting potatoes and slightly increase the amount of meat.
On a personal note: Oops! Some friends ask themselves over to dinner on a day I want to be a Fast Day. No problem! I double or triple the quantities and make sure that I don't take more than my share.
